By combining spices to marinate the pork you will turn an everyday staple into your very own signature sandwich! You’ll definitely want to add this to your list of go-to classics.
Ingredients:
- Top loin pork chops
- ½ cup of mayo
- Salad (spinach/lettuce/other)
- Tomato/peppers (preference)
- Ciabatta or long roll
- Salt
- Pepper
- Tablespoon Cumin
- Tablespoon Allspice
- Tablespoon Cajun Seasoning
- Teaspoon Lime zest
Method:
Step 1
Add and combine spices (except Cajun) in a bowl with a dash of olive oil to create paste. Apply paste to each chop so it is entirely covered. Cover the bowl and let pork marinate in the refrigerator for at least 20 minutes. Marinating is not necessary, but it will give the meat more time to absorb the flavours.
Step 2
Grill the pork at a medium-high heat. Turn once allowing 3 to 4 minutes on each side or until cooked through.
Step 3
Remove the pork from heat and cover with foil. For best results let the pork rest for 5 minutes before slicing.
Step 4
Mix mayonnaise, lime zest, and Cajun seasoning in a bowl.
Step 5
Spread mayonnaise mixture liberally on your choice of bread, cut pork into thin slices and place on bread. Add your choice of salad ingredients as desired.
Notes:
- If you are not eating your sandwich immediately make sure your salad ingredients are completely dry before placing it in your sandwich and consider substituting capsicum for tomato as the tomato will make your sandwich soggy if left too long.
